As you can see potatoes contain quite a bit of phosphorus, a hint of calcium, but are quite acidic.

This means unfortunately that chinchillas cannot eat potatoes at all in any form, they are just not good for them to eat. This includes raw potato, cooked potato, or any kind of fries.
